I’m going to be honest with you. I didn’t set out to make “shaved ice.” I actually set out to make a creamy grapefruit sorbet. But as you now know, that’s not how my recipe turned out! Instead of getting a creamy consistency, I got an icy consistency. I had to chisel out the “sorbet.”
If you or anyone has to “chisel out” sorbet, let me tell it to you straight––it’s not sorbet. You can call it a slushie or shaved ice. And it tastes good.
Since this recipe actually has zero milk/cream in it, it’s actually kind of a healthy (and vegan) alternative to ice cream or sorbet. I know sorbet doesn’t usually have any dairy products in it but hey, you never know. In my opinion, grapefruit is one of the most refreshing fruits anyone can eat. It’s got a strong tangy flavor and it’s full of juice!
Grapefruit Shaved Ice
Makes 4 servings
Ingredients:
- 3 cups grapefruit juice (I used two grapefruits)
- 2 tbsp maple syrup or honey
- 1 cup coconut milk
- (optional) 1/2 cup granulated sugar or sweetener of your choice
Directions:
Squeeze out the grapefruit juice (or if you have a Vitamix, remove all the white layer and use chunks of grapefruit) and put into a blender. Add in the maple syrup, coconut milk, and sugar, then blend again.
Freeze for at least 4 hours, but overnight is better. When you’re ready to serve, use an ice cream scoop to “chisel out” the ice. Garnish with a sprig of mint if you’d like to feel a little fancy!
