It’s already August, which means people are already starting to talk about fall and how summer is coming to an end. I refuse to believe that summer ends so early. In my mind, it ends at the end of September, and I guess I am allowed to believe that because we have warm, sunny days thru the middle of October even.
Since we are much of the way through summer, it’s time to take a step back and make sure we’re making the most of the long daylight hours and delightful weather.
Hence, s’mores. Hence, mini s’mores hand pies. They’re easy to eat and fun to make. Anyone would be a fan of how warm, melted chocolate and smooth creamy marshmallow spill out of the pie at first bite.
Mini S’mores Hand Pies
Makes 7-8 pies with a 3.75″ diameter. Recipe slightly adapted from Pass The Cocoa.
Ingredients:
- 2 1/4 cups all-purpose flour
- 1/2 cup graham cracker crumbs
- 2 tablespoons granulated sugar
- 1 teaspoon salt
- 3/4 cup vegetable oil (I actually used olive oil because I didn’t have vegetable oil on and it turned out well)
- ¼ cup cold water
- 1/2 cup mini marshmallows
- 1/2 + 1/2 cups semi-sweet chocolate chips
- 1 egg, beaten
Directions:
Preheat oven to 425 F.
In a medium-sized mixing bowl, whisk together the flour, graham cracker crumbs, sugar, and salt. Add the oil and water and mix until just combined. Remember that pie crust is tricky to get just right. If it is too runny, feel free to add some flour and if it is too dry, add a little oil.
Roll out the dough into a flat, smooth sheet. Then use a cookie cutter (I actually used these ramekins) to cut out perfect shapes of dough. Cut out twice as many circles as you want pies.
Fill each pie with a few marshmallows and chocolate chips. Crimp and seal each pie with the back of a fork. Use a fork with thick prongs for better results.
Glaze each pie with a little bit of egg to get a golden crust.
Place each pie on an unlined baking sheet and bake for 5 minutes at 425F. Then, set the heat to 350F and bake for another 10-15 minutes. The cooking time will vary based on the shape of your pies and the size.
Remove from the oven when golden brown and let cool a little before serving. You still want to serve them when they are a little warm! If you want to top the pies with melted chocolate, melt 1/2 cup of chocolate chips and use a fork to drizzle the chocolate onto the pies.
