Salads with mixed greens, kale, and alfalfa sprouts can be bland and bitter on their own, so balancing them out with sweet fruit like strawberries and pomegranate seeds is a must! What really unites these flavors, however, is a simple dressing consisting of lemon juice, olive oil, black pepper, and the tiniest bit of salt! This salad makes for the perfectly light meal!
Strawberry & Kale Salad
There aren’t really any perfect measurements for this salad. This recipe is more about the awesome combination of fruits and veggies and you should feel free to vary these ingredients to your own tastes.
Ingredients for the salad:
- 1 cup chopped Kale
- 1 cup Mixed Greens
- 2 Strawberries (I used 2 strawberries, sliced)
- 1/4 cup Pomegranate seeds
- 1/4 cup Alfalfa sprouts
Ingredients for the dressing:
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- black pepper (to taste)
- salt (to taste)
Directions:
In a bowl or on a plate, throw on the kale (make sure it’s chopped!), mixed greens, and alfalfa sprouts. The mix them together. Then throw in the sliced strawberries and drizzle on the pomegranate seeds. Then add the dressing to taste and you’re done!
Easy salad! It only took me 10 minutes to prepare, tops! I’m a slow chef, guys.
